STRETCH & EAT LESS Diet

It made me cringe in December to think about the first day of the new year approaching and all of the over-enthusiastic women that would be soon flocking the local gym. SO, instead of renewing that gym membership, I began my STRETCH & EAT LESS Diet.

It’s fantastic.

It’s easy.

The results come FAST.

Here’s the scoop:

1. Skip SUGAR in your coffee
2. Do Simple Yoga Stretches at Night
3. Eat Veggies Raw for Lunch, Cooked for Dinner
4. Choose Lean Meats (chicken & pork)
5. Don’t Starve yourself, Portion yourself -

6. Park Further Away at Store/Work & Take the Stairs!
7. Do 40-60 crunchies before Bed

A Breakdown of My Past Three Days:

<Sunday night (Jan. 3rd), I began doing simple yoga stretches. The next morning I would begin my new diet. I also hopped on the digital scale to document my weight.>

Monday (Jan. 4th), I started off the day with an oatmeal breakfast* and a cup of coffee fat free half&half  and NO SUGAR.
***Eating breakfast is crucial to weight loss and  gets your metabolism going and helps BURN calories throughtout day.***
Salad w/ Olive Oil Vinegarette for lunch, Hummus & 10 Pita chips for snack, Eggplant & Chicken w/ Tomatoes for dinner, Sugar Free pudding for snack

Weighed myself at night: 2.5 lbs DOWN!

Tuesday  (Jan. 5th) Cheerios for Breakafast, Raw Veggies for Lunch, Apple for snack, StirFry for dinner, Sugar Free Pudding for Snack

Weighed myself in morning: 4.5 lbs Total DOWN!

Wednesday (Jan. 6th) Cheerios for Breakfast, Yogurt & a  whole Kiwi for Lunch, lean porkchop, brocolli & 1/2 rice for dinner, tortillas & fresh salsa (literally home made salsa) for snack

Weighed myself at night: 6 lbs Total DOWN!

And now it’s already Thursday and I am feeling more motivated than ever to get these 15 pounds off!!!!

This 16th century house was given a side extension, which added a bedroom and bathroom on the ground floor, and a bedroom with dormer on the first floor.  Windows were made to match.  The thatch was re-laid across the whole roof.

This house is timber-framed and was built in the early 17th century. In contrast to medieval houses, it has no open hall. Instead, a brick chimney heats two of the ground floor rooms and one of the upper chambers. This revolutionary change in house planning took place in the mid 16th century. Pendean nevertheless retains some medieval features such as unglazed windows.  The interior of the house is completely furnished.

Shurnock Court is a most charming Grade II* Listed country house dating from the 16th Century.

I am planning on finding or making bedding for my guest room and came across this gorgeous  blue/cream patterned set. The walls are already painted pale yellow & I have been searching for a bold color for the spread.

Accents in the room will include a lampshade with dark yellow print:

I don’t want to overdue the patterns in the room, but I love these pillows below for elsewhere in the house!

TUSCAN STUFFED MUSHROOMS  WITH PARM CHEESE AND SAUSAGE
12 lg. mushrooms (approximately 3/4 lb.)
2 tbsp. fresh bread crumbs
2 tbsp. grated Parmesan cheese
1 tbsp. butter
1/2 c. Mushroom Stuffing
1/4 lb. sweet Italian sausage
1 tbsp. chopped parsley
Remove mushroom stems and use them to prepare the Mushroom Stuffing. When stuffing has cooled slightly, add sausage meat and parsley. Mix well. Stuff caps with mushroom-sausage mixture. Mix crumbs and cheese and sprinkle over stuffed mushrooms. Dot each with butter.Grease a shallow baking dish and arrange caps in it, stuffed side up. Bake in a 400 degree oven for about 20 minutes, basting occasionally with the juices that accumulate in the pan. Serve hot or cold. Serves 4.
MUSHROOM STUFFING:
Mushroom stems from recipe above
1 1/2 tsp. butter
2 tbsp. finely chopped onion
Juice of half a lemon
Salt and freshly ground pepper
1 tsp. oil
Chop mushroom stems finely. Place in a clean cloth and squeeze to extract most of the juice. Heat butter and oil in a skillet. Add onions and cook until wilted. Add mushroom stems and mix well. Add lemon juice, salt and pepper to taste. Cook, stirring constantly, until all of the moisture has evaporated.
